「お茶」とは、じつに多様なものです。種類の多さ、“入れる”という行為の奥深さ、そして知識と五感を重ねた先に生まれる豊かさ。白鷺茶房は、そうした「お茶の多様性」を丁寧に紐解く場所です。一杯のお茶を通じて、そこに流れる時間や文脈までも感じてほしい。私自身、お茶の多様性に魅せられた一人として、姫路の老舗茶舗の家系に生まれ、学びを重ねる中で身につけたものを、お伝えしていければと思います。

And each production region has its own unique terroir (the specific climate, soil, and environmental factors of that region).

For example, the taste of tea changes depending on the temperature of the hot water used for brewing. What kind of teapot to use, what kind of water to use – there are several variables. Each tea has a suitable brewing method.

For example, unlocking the full potential of green tea is surprisingly difficult for beginners. How do you describe this aroma? How do you even perceive it in the first place? By developing not only your knowledge but also your physical senses, you'll be able to enjoy tea more deeply.

From Japanese tea to Chinese and Taiwanese tea.

In China, tea is broadly classified into six types based on the degree of fermentation during the production process. In Japan, green tea is further classified into more specific categories. Currently, Shiragi Sabou offers "Green Tea (Japan / Sencha, Fukamushi Sencha, Hojicha)", "Oolong Tea (Japan, China, Taiwan)", and "Black Tea (Japan)". Please let us know your preferred type of tea.
